Day 2 Florence - Lucca Tuscany You are greeted and transferred to Lucca. Prosecco sparkling wine and antipasti on the patio welcome you to our farmhouse. Time to unpack and rest. This evening, indulge in a starlit dinner under the marvelous vined patio. (L D) Day 3 Tuscan Hills above Lucca A morning walk through olive groves and vineyards to the shepherd's house for fresh ricotta. We search for herbs and wild greens to add to our day's dishes. After our first cooking lesson, it's time to prepare lunch, featuring that exquisite ricotta. A late afternoon wine-tasting class will be followed by dinner preparation. Your day closes with candlelight dinner under the patio. (BB L D) Day 4 Tuscan Hills above Lucca A trip to the market and an exploration of the many specialty food and kitchen shops. Lunch at a small "osteria" featuring local cucina, followed by a visit to a Lucchese Villa and garden. Return to our farmhouse for a tasting of Italian olive oils. Instruction and dinner preparation is followed by dinner al fresco. (BB L D) Day 5 Tuscan Hills above Lucca A day of special delights of the Italian cucina begins with cooking lesson and lunch preparation. A leisurely lunch in the shade. Take the opportunity to hike, lounge in the sun, or read in the cozy library. Late afternoon, we visit a local winery for a tour and tasting. Dinner at a restaurant that illustrates the best in Tuscan cooking, with their use of regional ingredients. (BB L D) Day 6 Tuscan Hills above Lucca A return to town of Lucca for another chance to buy that Italian kitchen item you always wanted or regional food specialties, stop into that little church you missed last time; taste-test gelati; or sit and sip a cappuccino. Lunch is at an enoteca where we sample wine and regional salamis and cheeses. For dinner, a local pizzaiolo (pizza maker) works with you to make your favorite pizza. A grappa tasting follows. (BB L D) Day 7 Tuscan Hills above Lucca It's Bread Day! Your lunch is prepared for you as you concentrate on making dough for winemaker's bread with grapes, or bread with olives and foccacia. To complete the tradition, you prepare 'arrosti', Italian baked dishes. You perk up your palate with a tasting of balsamicos. Enjoy the results of your 'bread day' under the patio. (BB L D) Day 8 Tuscan Hills above Lucca Our last day begins with instruction and lunch preparation, followed by lunch al fresco. Visit a small farm for an opportunity to taste and purchase the estate's wine, olive oil, honey, olives, vinegar, grappa and other products. Returning to our farmhouse, you are introduced to a variety of local cheeses and their accompaniments, following by instruction and dinner preparation.
